Simple Fresh Bruschetta

This simple fresh bruschetta is delicious and super easy to make! It celebrates the gorgeous flavors of fresh tomatoes, garlic and basil together. I love it on and along side a baguette or loaf of fresh ciabatta bread! I load the top with the tomato mixture and then dip the ends in the delicious juices left in the bowl!

I use my garden tomatoes a lot for bruschetta and it’s the perfect end of summer and fall appetizer that really celebrates all the goodness of summer harvesting! It’s also a super quick and effortless way to use up tomatoes before they go bad. My bruschetta is a little juicier than regular bruschetta because I am using garden tomatoes and I personally love the extra liquid for dipping my bread ends in.

What you need to make my simple fresh bruschetta:

Makes ~ 1 cup

  • 1 cup diced tomatoes – eave out excess liquid from tomatoes
  • 2 tablespoons finely chopped fresh basil or 1 1/2 teaspoons dried basil
  • 2 teaspoons minced garlic
  • 1 tablespoons white wine vinegar or white vinegar
  • 1 tablespoon olive oil
  • generous pinch sugar
  • generous pinch of salt
  • dash of black pepper

Instructions

  1. Dice tomatoes and leave out any excess tomato juice, dice basil and garlic and add to a bowl.
  2. Add white wine vinegar, olive oil, sugar, salt and black pepper to tomato mixture and mix well.
  3. Serve over bread.
