White Sausage Country Gravy

This white sausage country gravy is the perfect gravy for biscuits and gravy. It’s a rich milk based white gravy with ground sausage and spices. This gravy is totally delicious!

I grew up with biscuits and gravy and it’s a really nostalgic food for me, I have a high standard for how it tastes. It has to be full flavor and the perfect texture for me. Every time I go out to eat at a breakfast restaurant and I see biscuits and gravy on the menu I have to order it as a side. Sometimes it’s perfectly delicious and other times it just doesn’t cut it for me. Even the restaurants that serve a great version, I will say that nothing compares to a homemade biscuits and gravy in my opinion.

I love to use my biscuits recipe HERE for my biscuits and gravy. They are perfectly layered, tender and delicious. I also love them on the side with honey and butter or jam. They are easy to make too so I would recommend them over store bought mixes or pre-made dough. However, use whatever biscuits you love or have on hand.

  1. In a large skillet, add ground sausage, butter, salt, black pepper, sage, and cayenne pepper saute until cooked through. Break sausage up into small crumbles for a less chunky gravy.
  2. Add milk, cream and stir together.
  3. Bring to a boil and boil for roughly 3 minutes.
  4. Whisk together the cornstarch and water in a dish and whisk into your gravy.
  5. Cook until gravy thickens to your desired consistency.
  6. Taste and add additional salt and pepper to taste or if the gravy over reduced add a little more milk to balance it out.

  • 1/4 – 1/2 teaspoon black pepper- if you like a little spice from black pepper do 1/2 teaspoon
  • Optional – 1/4 teaspoon rubbed or ground sage
  • dash of cayenne pepper
  • 4 cups milk of choice
  • 1/2 cup cream or half and half
  • 2 tablespoons cornstarch
  • 2 tablespoons water
