Pineapple Shrimp Poke Bowl

This pineapple shrimp poke bowl is so delicious! It’s a easy and delicious way to get a taste of the islands from wherever you may be.

This poke bowl is full of caramelized pineapple, a sweet, savory and juicy shrimp, edamame, shredded cabbage, avocado, green onions, cucumbers, furikake topping (which consists of seaweed and sesame seeds) and topped with a delicious honey lime dressing and spicy mayo. Super delicious!

I am in a landlocked state so I appreciate a poke bowl I can make at home without too big of a hunt for raw fresh poke worthy seafood. I can find it but it isn’t always a guarantee, so that’s a big reason that I love that this recipe uses cooked shrimp. Anyone can get shrimp and make this bowl.

Poke bowls are essentially a Hawaiian version of a sushi bowl, so we see similar flavors and ingredients in these pole bowls as we see in sushi. They are super adaptable and you can add or leave out a lot of toppings according to your own personal preference.

This pineapple shrimp bowl has a little sweet and savory vibe going on in it. It’s fun, bright In flavors and yummy!

Instructions

  1. Cook rice or cauliflower rice and set aside.
  2. Add your sesame oil, garlic, ginger, pineapple, soy sauce and honey and cook until pineapple starts to gets some color.
  3. Add the shrimp to the pan, add the salt and cayenne and cook the shrimp with the pineapple until the shrimp is pink and cooked, remove from heat.
  4. Prep your vegetables you will be adding to the poke bowl.
  5. Make the honey lime dressing by adding whisking those ingredients together in a bowl.
  6. Whisk together the spicy mayo.
  7. Assemble the bowl by adding rice, pineapple and shrimp mixture, shelled edamame, shredded cabbage, green onions, avocado, cucumber, boy choy (if using it) and whatever toppings you want.
  8. Add a drizzle of honey lime dressing, spicy mayo and furikake or nori and sesame seeds.
  9. Enjoy!

Pineapple Shrimp Poke Bowl

Ingredients

  • 2 tablespoons sesame oil
  • 3 cloves garlic – minced
  • 1/2 teaspoon fresh ginger – minced or 1/8 teaspoon ground dried ginger
  • 1 cup pineapple – chunked fresh, frozen or canned
  • 2 tablespoons soy sauce or coconut aminos
  • 1 tablespoon honey
  • 1/2 pounds shrimp – peeled and deveined
  • Pinch salt – to taste
  • Dash cayenne
  • Rice:
  • 2 cups cooked sushi rice or 2 cups cauliflower rice
  • Topping:
  • 1/2 cup shelled edamame or mukimame
  • Shredded cabbage
  • 2 green onions – diced
  • 1 avocado – diced
  • 2 tablespoons furikake or nori cut into pieces and sesame seeds
  • 1 cucumber – diced
  • Bok choy – sliced and sautéed optional
  • Hot sauce – Sriracha or personal favorite for heat optional
  • Honey Lime Dressing:
  • 1 tablespoon lime juice
  • 1 teaspoon honey
  • 1 tablespoon soy sauce
  • Spicy Mayo:
  • 3 tablespoons mayonnaise
  • 1 teaspoon sriracha – for a spicier sauce add more sriracha

Instructions
