Spiced Zucchini Bread

I love this spiced zucchini bread and it’s the perfect way to use up extra zucchini. My whole family loves it and It makes the perfect quick breakfast or snack. I love to bake a whole loaf then freeze individual slices for a convenient and delicious snack any time.

I always plant zucchini in my garden during the summer and they always produce a lot! It’s all a part of the fun of it! If you forget to pick a little zucchini and come back in a few days it will be massive! They are such fun plants to grow for that reason. However, finding yourself with an overabundance is really easy. This bread is a great way to use it up.

What you need to make this spiced zucchini bread: (Printable recipe is below)

Makes 1 large bread tin or 2 small bread tins

  • 1/2 cup salted butter – melted
  • 1 1/4 cups sugar
  • 3 eggs
  • 2 cups shredded zucchini
  • 1 teaspoons vanilla extract
  • 2 cups flour
  • 2 tablespoons pumpkin pie spice
  • 1 teaspoon ground cinnamon
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • (optional) 1/2 cup chocolate chips
  • (optional) 1/2 cup nuts

Instructions

  1. Preheat the oven to 350 F.
  2. Grease or line with parchment paper a large bread pan or 2 smaller bread pans.
  3. Add the butter, sugar and eggs together and mix well.
  4. Add the shredded zucchini and vanilla extract to egg mixture and mix in.
  5. In another bowl, add the flour, pumpkin pie spice, cinnamon, baking powder and salt together and mix well.
  6. Add the flour mixture into the butter and zucchini mixture and stir well, if adding chocolate chips or nuts, stir in at this point.
  7. Pour batter into baking pans and bake for 1 hour to 1 hour and 10 minutes or until centers are risen and the top of zucchini bread springs back when pressed.
