I love this spiced zucchini bread and it’s the perfect way to use up extra zucchini. My whole family loves it and It makes the perfect quick breakfast or snack. I love to bake a whole loaf then freeze individual slices for a convenient and delicious snack any time.
I always plant zucchini in my garden during the summer and they always produce a lot! It’s all a part of the fun of it! If you forget to pick a little zucchini and come back in a few days it will be massive! They are such fun plants to grow for that reason. However, finding yourself with an overabundance is really easy. This bread is a great way to use it up.
What you need to make this spiced zucchini bread: (Printable recipe is below)
Makes 1 large bread tin or 2 small bread tins
- 1/2 cup salted butter – melted
- 1 1/4 cups sugar
- 3 eggs
- 2 cups shredded zucchini
- 1 teaspoons vanilla extract
- 2 cups flour
- 2 tablespoons pumpkin pie spice
- 1 teaspoon ground cinnamon
- 1 tablespoon baking powder
- 1 teaspoon salt
- (optional) 1/2 cup chocolate chips
- (optional) 1/2 cup nuts
Instructions
- Preheat the oven to 350 F.
- Grease or line with parchment paper a large bread pan or 2 smaller bread pans.
- Add the butter, sugar and eggs together and mix well.
- Add the shredded zucchini and vanilla extract to egg mixture and mix in.
- In another bowl, add the flour, pumpkin pie spice, cinnamon, baking powder and salt together and mix well.
- Add the flour mixture into the butter and zucchini mixture and stir well, if adding chocolate chips or nuts, stir in at this point.
- Pour batter into baking pans and bake for 1 hour to 1 hour and 10 minutes or until centers are risen and the top of zucchini bread springs back when pressed.
