Ham and Cheese Bake

This ham and cheese bake is a homemade dough that gets wrapped around a mixture of ham, cheeses, caramelized onions and ranch dressing. It’s delicious and the whole family will love these hand held rolls.

These are great to make for make ahead lunches too, they can be microwaved for a quick and easy lunch.

I love to make these with leftover ham from holidays but you can use any form of ham for these, cubed or deli ham will both work great.

The dough for these is super simple to make and doesn’t require any long rises. You will mix it up them while you prepare the filling let the dough rest. Then roll out, stuff rolls and bake, no need to do a second rise. The dough is still light and fluffy.

Makes 5 large bakes

For the dough:

  • 1 cup warm water
  • 2 1/2 teaspoons dry active yeast
  • 2 tablespoons vegetable oil
  • 1 1/2 teaspoons salt
  • 2 teaspoons sugar
  • 2 1/2 cups flour

Caramelized onions:

  • 1 small onion – finely diced
  • 1 teaspoon olive oil
  • dash black pepper

Filling:

  • 2 cups ham – chopped
  • 4 ounces melted cream cheese
  • 1/4 cup ranch dressing
  • 1 teaspoon mustard
  • 2 cups shredded cheddar cheese
  • 2 tablespoons grated parmesan cheese – more for on top

Egg wash:

  • 1 egg
  • 1 tablespoon water

Instructions (picture guide below)

  1. Preheat oven to 400 F.
  2. In a mixing bowl combine, warm water, yeast, oil, salt, sugar and flour and mix well.
  3. Knead for 2 minutes then set aside while you prepare the onions and fillings.
  4. In a sauce pan, add onions, olive oil and black pepper and sauté for a few minutes until the onions are caramelized.
  5. Add the onions to a bowl with the ham, melted cream cheese (microwave to melt), ranch dressing, mustard, cheddar cheese and parmesan cheese.
  6. Roll out the dough into a large rectangle with the dough fairly thin.
  7. Cut into 5 large strips, lay the filling down the center of each section of dough.
  8. Fold the side of the dough over the filling and fold over the other side of dough and fold up the ends so the filling is completely covered.
  9. Place dough seam down on a parchment paper lined cookie sheet with space between each roll for the dough to rise while cooking.
  10. Mix together the egg wash and brush the tops of the dough and sprinkle the tops with grated parmesan cheese.
  11. Bake for 20-22 minutes or until the dough is golden brown.
  12. Remove from oven and let cool for a few minutes before enjoying.
