Dulce De Leche Rice Crispy Treats

These dulce de leche rice crispy treats are a fun and delicious sweet treat. They are like a traditional rice crispy treat but with dulce de leche mixed into the marshmallow mix.

I love them with a little extra salt for a sweet and salty vibe. Instruction on how to do that are below.

These rice crispy treats can actually be made with most cereals, ideally rice crispies work the best. I used cornflakes in a batch and it made them hard to eat texturally so I would steer clear of those. Chex cereal would work, along with other cereals that can hold their shape and integrity when combined with other ingredients.

Adding chocolate on top is completely optional and definitely takes this dessert into the sweet and indulgent category. If you add it then I would suggest using milk chocolate because I think it tastes better with the dulce de leche.

I used semi-sweet on the batch with cornflakes and it was too overpowering for the dulce de leche.

What you need to make these dulce de leche rice crispy treats:

Makes 1 sheet pan

  • 1/2 cup salted butter- melted
  • 20 ounces marshmallows (two bags)
  • 13.5 ounce can of dulce de leche
  • 1/2 teaspoon salt – more for on top if you like a little more salt
  • 12 cups rice crispies or cereal of choice
  • 24 ounces milk chocolate chips – optional
  • 1 cup melting chocolates – optional
  • sprinkles – optional

Instructions

  1. In a large microwave safe bowl, add melted butter and marshmallows.
  2. Microwave 1 minutes or until the marshmallows are softened.
  3. Stir in the dulce de leche and salt.
  4. Add rice crispies or cereal of choice and stir until well combined.
  5. Place on parchment paper lined or greased cookie sheet and press out onto the pan.
  6. If you like a little extra salt, sprinkle the top of the cereal treats with salt.
  7. If using chocolate on top, melt milk chocolate chips in a microwave safe dish in 30 second increments, stirring after each 30 seconds until chocolate is melted.
  8. Spread melted milk chocolate on top of the cereal treats.
  9. Heat the melting chocolate in the same way you did the milk chocolate, in 30 second increments and stirring until it is melted.
  10. Drizzle the melting chocolates over the top of the milk chocolate then place sprinkles on top.
  11. Let the chocolate cool and set, then cut and serve.
