Asian Vegetable and Dumpling Soup

This Asian vegetable and dumpling soup is so comforting and delicious. It features Asian flavors, like sesame and garlic. It uses premade dumplings, making it a cinch to put together!

The base of this soup has a nice sesame, garlic and ginger flavor with bell peppers, green onions and zucchini.

You can use whatever type of dumping you desire. I love Trader Joes frozen dumplings, I used pork in the soup pictured in this post but chicken, mushroom or vegetable would also taste delicious!

I have the option to use Szechuan pepper in this recipe, it will give it a classic Asian flavor but black pepper also works great.

Instructions

  1. In a medium/large pot, add sesame oil, garlic, ginger, zucchini, bell pepper and green onions and sauté until fragrant.
  2. Add the chicken broth, salt and pepper and bring to a boil then reduce to a simmer and simmer for 5 minutes.
  3. Add dumplings and cook until they are cooked through, time will vary per dumpling and if they are frozen or fresh. They will float when they are done.
  4. Serve and enjoy.

Ingredients

  • 1 tablespoon toasted sesame oil
  • 5 cloves garlic or 1 1/2 tablespoons garlic -minced
  • 1/2 tablespoon minced ginger or 1/2 teaspoon ginger powder
  • 1 zucchini – diced
  • 1 red bell pepper – diced
  • 3 green onions – sliced
  • 32 ounces chicken broth
  • 1/2 teaspoon salt
  • Dash of ground black pepper or Szechuan pepper
  • 9 ounces dumplings – about 10 premade dumplings of choice
