No Bake Peach Cheesecake Cobbler

This no bake peach cheesecake cobbler is delicious! It’s also secretly super quick and easy to make!

It has a cinnamon graham cracker crumble with a vanilla cheesecake filling, fresh peaches, caramel drizzle and more cinnamon crumble topping. Yum!

It tastes like a decadent peach cobbler and is perfect for late summer nights.

I started this blog during peach season, thus the name fly peach pie was born. Needless to say, I love peaches, and this dessert is a great way to use them!

I love that these keep the fresh taste of the peach and the acidity cuts through the rich and creamy filling. The subtle cinnamon and decadent caramel warms this dish up and gives you full peach cobbler vibes!

This recipe makes 10-12 individual cups of dessert, you can fill them according to your preferences, if you want them to be a full dessert then 10 will work, if they are on a dessert table then you could get away with 12 or more.

These look fancy and are easy to assemble so they are perfect for weddings, bridal showers, parties or events.

What you need to make this no bake peach cheesecake cobbler: (printable recipe card is below)

Makes 10-12 servings

For the crust:

  • 1 package graham crackers
  • 1/4 cup salted butter – melted
  • 1/2 cup powdered sugar
  • 1 1/2 teaspoons cinnamon

For the filling:

  • 8 ounces cream cheese – softened
  • 1 cup whipping cream
  • 3 cups powder sugar
  • 1 tablespoon vanilla

For peaches:

  • 2 large peaches – pitted and chopped
  • 2 teaspoons powdered sugar
  • Drizzle of Caramel sauce on top of each cup (I use the ice cream stuff in a squirt bottle)
  • Pinch of salt for on top of each cup
  • You will need 10-12 serving cups to build these in or you can use a 8 x 8 pan to make this in one dish.

Instructions

  1. In a zip lock bag, add graham crackers then smash them finely.
  2. Add powdered sugar, cinnamon and melted butter and mix until a crumble mixture forms.
  3. Divide between the serving cups and leave a little extra for a topping after the cups are filled.
  4. Make the filling by adding all of the ingredients into a mixing bowl and beat with a whisk attachment until it’s fluffy and well blended.
  5. Add mixture over the graham cracker mixture in the cups.
  6. For the peaches, pit and dice peaches and sprinkle with sugar.
  7. Add peaches top of the whipped mixture.
  8. Drizzle some caramel sauce onto each cup, followed by remaining graham cracker crumbs and a little pinch of salt to give the flavors a little extra pop.
  9. Serve and enjoy!
