Sausage Christmas Breakfast Casserole

This sausage Christmas breakfast casserole is the perfect holiday breakfast dish. It’s easy to make and it tastes delicious!

It can easily be put together the night before, refrigerated and then baked the next morning or it can be easily assembled in the morning in about 10 minutes and it takes about 35 minutes to bake.

This casserole has sourdough bread, sausage, eggs, simple seasonings that everyone should have on hand and cheese. It’s almost like a baked sausage, egg and cheese sandwich in casserole form.

What you need to make this Sausage Christmas breakfast casserole:

Makes 1 standard large casserole dish – serves 6-8

  • 7 cups sourdough bread – about 5 slices, cut into chunks
  • 7 eggs
  • 2 cups milk
  • 1 teaspoon mustard – any variety, yellow, Dijon or spicy brown
  • 1/4 teaspoon black pepper more if you like black pepper
  • 1 teaspoon salt
  • 1/2 pound ground sausage – any variety
  • 1 1/2 cups shredded cheddar cheese – divided

Instructions

  1. Preheat the oven to 400 F.
  2. Cut bread and set aside.
  3. Cook sausage and set aside.
  4. In a bowl, add eggs, milk, mustard, black pepper, salt, sausage, 1 cup of cheddar cheese and mix together.
  5. Add the bread chunks and sausage to egg mixture and mix well until bread is totally covered.
  6. Pour mixture into a greased casserole dish and top with the remaining shredded cheese.
  7. Bake for 35 minutes then broil the top for ~2 minutes until top is golden. If cooking from it being refrigerated then add an additional 10 minutes bake time .
  8. Serve and enjoy.
