Hot Chocolate Cake

You guys I am incredibly picky when it comes to chocolate cake recipes! Chocolate cake can be fickle but this hot chocolate cake recipe is super easy, it’s a dump mix and bake cake, nothing complicated! It tastes moist, rich and delicious! It almost tastes like a brownie but is fluffy like a cake.

Like I have said before, I believe in chocolate cake on Sunday! It just seems to fit the bill for a Sunday treat a lot of the time. I made this hot chocolate cake last Sunday and everyone loved it! It was the perfect compliment to our Sunday dinner.

My first born son loves chocolate as much (and maybe even more) as I do and he asked for seconds and honestly he will probably be the one who ends up finishing the leftover cake in the fridge. I got 6 thumbs up from my little clan on this cake, even my not crazy about chocolate daughter gave me a thumbs up.

What you need

Makes 2 – 8 or 9 inch rounds, 1 – 9 x 13 cake, 1 – bundt cake or 18 -cupcakes.

1-1/2 cups flour
2 cups sugar
1/2 cup cocoa powder
1 teaspoon salt
1 teaspoon baking soda
1-1/2 teaspoons baking powder
1/2 cup hot chocolate mix
3 eggs
1/2 cup butter – melted
1- 1/2 cups milk
2 tablespoon red wine vinegar or white vinegar can be subbed

Instructions
  1. Preheat oven to 350 F.
  2. mix milk and red wine vinegar together and stir. Let sit while you combine all of the other ingredients. You are essentially making your own buttermilk.
  3. In a large bowl, combine flour, sugar, cocoa powder, salt, baking soda, baking powder and hot chocolate mix together and stir well.
  4. Add eggs, butter and milk and vinegar mixture and whisk everything together.
  5. Grease well and line bottoms of pans using with parchment paper.
  6. Pour batter into pans you are using.
  7. Bake according to cook times for each size pans below.
  8. Allow to cool then frost with frosting of choice. Check out my chocolate buttercream frosting recipe HERE.

Baking times:

2 – 8 inch round bake for ~29 minutes or until a toothpick comes out clean.
2 – 9 inch rounds bake ~25 minutes or until toothpick comes out clean.
1 – 9 X 13 pan bake for 30-35 minutes.
18 cupcakes bake 15-20 minutes.
1- bundt cake bake ~40-45 minutes.
