Lemon Poppy Seed Pancakes

These Lemon Poppy Seed Pancakes are the answer to all your Lemon Poppy Seed cravings! They are quick, easy and delicious! I could make these any time of day, every day and happily eat them because they are so delicious!

I like to pair mine with Strawberry Freezer Jam or my Strawberry Syrup (recipe here), Fresh Strawberries, Blueberries and Vanilla Greek Yogurt. They are also delicious with a raspberry syrup or your favorite toppings.

This pancake recipe will make enough to serve 6 people. It can also be cut in half or you can pre-make this into a dry pancake mix by adding all of the dry ingredients into a ziplock bag and writing with a sharpie or marker on the bag the wet ingredients that need to be added. This will save some time if you want a quick and easy to prepare breakfast.

Instructions 

  1. Mix together the flour, baking powder, baking soda, salt, sugar and poppy seeds.
  2. Add milk, egg, butter, lemon juice, lemon extract and lemon zest to the dry ingredients and whisk until well combined.
  3. Pour onto a hot griddle and cook until bubbles appear then flip over and continue cooking until pancake is cooked through.
