Sweet Potato Pasta

Sweet Potato Pasta! This is a healthy pasta recipe that can be used in several different Pasta creations. It is a softer dough and has to be hand rolled with a rolling pin because using a pasta roller will rip it. I tried and it wasn’t pretty, so best to stick with a rolling pin. It is packed with delicious nutrients from the sweet potato. I used a white fleshed sweet potato variety called the “Hannah” sweet potato but you can use any variety of sweet potato just know the color will change. This dough is also delicious when rolled for Gnocchi too!

What you need to make Sweet Potato Pasta (printable recipe card is below)

  • 1 Cup Cooked and mashed Sweet potato I used the Hannah variety to make the pasta white but any variety will work
  • 1 Cup Flour or Gluten Free Baking Mix *More if needed
  • 2 Eggs
  • 1 teaspoon Salt

Instructions

  1. Roast, microwave or boil a sweet potato then remove the skins.
  2. Mash sweet potato up with a mixer and let it cool down.
  3. Add mashed sweet potato to mixing bowl. Next add flour mixture. and combine with sweet potato.
  4. Added 2 eggs and 1/2 tsp salt. Then mix together adding more flour if needed.
  5. It should come together into a soft dough ball. This pasta dough is really soft and delicate but shouldn’t be sticky. Add in more flour if it’s sticky and knead the dough through to make sure the inside of your dough ball isn’t sticky.
  6. Now dump dough onto a floured surface and use a rolling pin to roll out dough. (This dough is too soft to be run through a pasta roller) Next take a cup, cookie cutter, ravioli cutter, pizza cutter or knife if your doing a flat wider pasta to cut pasta into desired shape. Bring water to a boil and cook pasta into water for 2-3 minutes.
