Caramel Pecan Pretzel Bites

These caramel pecan pretzel bites are a quick, easy and delicious snack that will hit those sweet, salty, caramel, chocolaty cravings! This recipe makes about 50 bites.

This recipe will store well in the refrigerator for long periods of time or on the counter for up to a few weeks.

To make these caramel pecan pretzel bites, first you need square pretzels like the ones I have in the picture below. Place them on a baking sheet that is covered with parchment paper.

Next you will need caramels. Any caramel will work, I didn’t want to peel each individual square so I opted to use these Caramel Bits. If you use the squares, cut them in half. To make your own check out my recipe for THE BEST HOMEMADE CARAMEL HERE.

Place the caramel bits onto the square pretzels along with bits of pecan. (picture below)

  1. Melt in an oven set to 350 F. for 5-7 minutes. The caramel will still be little balls but will be melted onto the pretzel enough.
  2. Slightly press down on the caramel to make sure it is attached.
  3. Next, melt 1/2 of a 12 ounce bag of chocolate chips, so about 6 ounces in the microwave or double boiler.
  4. If using the microwave, heat for 30 seconds then stir and repeat until chocolate is melted ( this is the best microwave chocolate tempering I have found). Once chocolate is melted, spoon on a dab for each pretzel piece. Melt about 1/4 cup white chocolate chips the same way, 30 second intervals until melted.
  5. Use a butter knife or fork to drizzle the white chocolate over the dark or bittersweet chocolate.
  6. Cool the pretzel caramel pecan chocolate bites in a fridge until chocolate hardens and enjoy!

    I freeze mine for a few minutes then put them in a zip lock bag and store them in the door of my fridge for easy access when those craving hit.

Ingredients

  • 50 square pretzels
  • 6 ounces caramels If using squares you will need 25 squares cut in half
  • 50 half pieces pecans you can use bits of pecans too
  • 6 ounces semi-sweet or dark chocolate chips
  • 1/4 cup white chocolate chips

Instructions

  • Preheat oven to 350 F.
  • Line a baking sheet with parchment paper and lay pretzels out on parchment paper.
  • Place caramel bits or caramel pieces on each square followed by a half piece of pecan.
  • Bake in the oven for 5-6 minutes or until the caramel gets soft and starts to melt. The caramel will not loose it's shape but will get soft.
  • Remove from the oven and press down slightly on the softened caramel so it really attaches to the pretzel.
  • Melt semi-sweet or dark chocolate chips in a bowl in the microwave for 30 seconds. after 30 seconds remove from the microwave, stir and repeat until the chocolate is melted and smooth.
  • Melt the white chocolate the same way.
  • Spoon on a small dab of semi-sweet chocolate to each pretzel.
  • Drizzle the white chocolate on top of the semi-sweet or dark chocolate by dipping a fork or butter knife in the chocolate and whipping it onto the tops. I used my knife to swirl some of mine.
  • Move to fridge for chocolate to harden and enjoy.
  • These can be stored in a ziplock bag in the fridge to avoid chocolate melting.
