Maple Roasted Brussels Sprout Salad

I love this maple roasted brussels sprout salad! It’s savory, slightly sweet with yummy pops of tart sweetness from the craisins, nutty pecans, salty chunks of feta and savory bacon bits with the roasted brussels sprouts.

Roasted Brussels Sprouts are my favorite! This “salad” is tasty and hearty and can be eaten as a main dish or as a side dish. It is perfect for Thanksgiving or around the holiday’s!

My son loves brussels sprouts, so much that we have to monitor how many he eats because he will get a tummy ache from eating too many. He loves them roasted with the maple syrup, like I have in this recipe. So between me and him, they always get eaten!

What you need to make this Maple Roasted Brussels Sprout Salad: (printable recipe card below)

Serves 8-10 People as a side or 4-6 people as a main dish
  • 32 ounces Brussels Sprouts – quartered
  • 1 Tablespoon Olive Oil
  • 1 1/2 teaspoon Salt
  • 1/4 Teaspoon Black pepper
  • 2 Tablespoons Butter
  • 1/4 Cup Pure Maple Syrup
  • 1/4 cup Pecans
  • 1/4 Cup Craisins
  • 1/4 Cup Bacon Bits
  • 1/4 Cup Feta Cheese

Instructions

  1. Preheat Oven to 425 F.
  2. Toss quartered Brussels sprouts in olive oil, salt and pepper then bake for 35 minutes.
  3. After they are done baking; In a large pan, add roasted Brussels sprouts, maple syrup, pecans, bacon bits and craisins then stir over medium high heat until maple syrup starts to slightly brown the Brussels sprouts, about 4-5 minutes.
  4. Remove from heat and add feta then salt and pepper to taste and enjoy!
