Shortcut Hollandaise Sauce

This shortcut hollandaise sauce is the easiest hollandaise sauce you will ever make and it tastes delicious! It’s takes just a few minutes to make and the risk of having it break on you are a lot smaller than making it the traditional way.

I love eggs Benedict and hollandaise sauce but sometimes I want it without having to make it the emulsion way with the butter, egg and lemon and then there is also the risk of breaking the sauce, which I have done too many times. This shortcut hollandaise sauce tastes just like the real deal but without the time or risk of breaking your sauce. Can I get a hallelujah!

Shrimp eggs benedict with shortcut hollandaise sauce

What you need to make this Shortcut Hollandaise Sauce: (printable recipe card is below)

Serves 4 

  • 1/4 Cup Mayonnaise (any kind will work)
  • 1 Egg Yolk
  • 1 teaspoon Lemon Juice
  • Sprinkle of Cayenne Pepper
  • Sprinkle of Salt

Instructions

  1. In a microwave safe bowl add mayonnaise. Heat for 15 seconds. The oil from the mayo will start to slightly separate but that is Ok.
  2. Add in your egg yolk and stir. The mixture will be warm but the egg yolk will only cook slightly from the heat of the mayonnaise.
  3. Add the lemon juice, salt and cayenne pepper.
  4. The lemon juice will help cure the egg slightly more.
  5. Serve!
