Refined Sugar Free No Bake Cookies

I said goodbye to refined sugars this week to help give my body a much needed reset. So I created these delicious refined sugar free no bake cookies! They have been helping me fight the afternoon “hangries” since. They are the perfect afternoon snack and come together super quickly!

What you need to make refined sugar free no bake cookies:

Makes 18 cookies

1/2 cup creamy peanut butter
1 cup water
1 tsp vanilla extract
3/4 cup Truvia – stevia and sugar cane blend
1/4 cup real maple syrup
1/3 cup unsweetened cocoa powder
1/4 teaspoon salt
1-1/2 cups quick oats

Instructions:

  1. In a large sauce pan, add peanut butter, water, vanilla, truvia, maple syrup, cocoa powder and salt.
  2. Stir until peanut butter is melted together, add more water if it seizes up too quickly or gets too thick.
  3. Add quick oats and stir together.
  4. Scoop into balls onto parchment paper or a lightly greased plate or pan.
  5. Chill and enjoy.
