Rosa-doodle Cookies

These Rosa-doodle cookies are dedicated to my daughter. These snicker-doodle like cookies are her favorite and the first recipe she made all by herself. Since this blog is a journal of sorts for my posterity these are going to be named rosa-doodles and I have a feeling she will be known for them in years to come!

These are perfectly soft, chewy and slightly crisp in all of the right places. They are super easy to make and all of your snicker-doodle loving friends and family will go ga-ga over them! Promise!

What you need to make rosa-doodle cookies:

Makes 24 cookies

  • 1/2 cup butter – softened
  • 1 cup sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2 cups flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 cup sugar
  • 1-1/2 teaspoons cinnamon

Instructions

  1. Preheat oven to 375 F.
  2. In a bowl, add softened butter and sugar and mix well.
  3. Add eggs and vanilla and stir until smooth.
  4. In another bowl, add flour, baking soda and salt and stir.
  5. Add flour mixture to butter mixture and stir until a dough forms.
  6. Roll dough into ~ 1-1/2 inch thick balls.
  7. In another bowl, mix sugar and cinnamon together.
  8. Roll the cookie dough balls in the cinnamon sugar mixture.
  9. Place on a cookie sheet and press down slightly to form a disc shaped cookie, sprinkle a little more cinnamon sugar mixture on top.
  10. Bake for 8-9 minutes.
