Chicken Fingers

Sometimes I just crave chicken fingers dipped in a variety of sauces. These chicken fingers are super tasty and are not too hard or time consuming. They are moist, flavorful and have that yummy crispy crunch on the outsides. I compare them in flavor to Chick-fil-a but they are not a copycat recipe, so they taste different but that should give you a little reference on taste. What you need to make chicken fingers:

serves 3

  • 1 pound chicken tenders


For flour mixture:

  • 1 cup flour
  • 1/2 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper


For egg mixture:

  • 2 eggs


For milk mixture:

  • 1 egg
  • 1/2 cup milk
  • 1/4 cup pickle juice

For cooking:

  • ~4 cups vegetable oil – you want the oil to be about 3 inches deep.

Instructions

  1. Grab 3 large bowls.
  2. In one bowl combine the flour, garlic powder, paprika, onion powder, salt and black pepper.
  3. In another bowl, whisk 2 eggs.
  4. In another bowl, add egg, milk and pickle juice.
  5. Dip chicken tenders in flour mixture.
  6. Then dip into egg mixture.
  7. Back into flour mixture.
  8. Into milk mixture then back into flour mixture.
  9. Set aside until you are ready to cook them.
  10. Repeat with each chicken tender until all of the chicken tenders are coated.
  11. Heat oil in a pan until it is 350 F. to 375 F.. helpful tip: place a popcorn kernel in the oil and when it pops you are ready to cook.
  12. Place chicken fingers into the oil and cook until the outside begins to brown, flip it over and cook until the other side is brown as well. This may take a little practice to get the perfect cook. The insides should be at least 165 F. if you have a meat thermometer you can check or cut one in half to test before you finish the rest of the batch.
  13. Set on a paper towel lined dish and keep in a warm oven until all of the chicken is cooked and you are ready to eat.
  14. Enjoy!
