St. Patrick’s Day Dinner

St. Patrick’s day is such a fun holiday! Leprechauns, gold, rainbows, four leaf clovers, green, pinching and traditional Irish recipes. What’s not to love about it!?! I have always had fun with food on this holiday then I became a mom of four kids and now I have even more fun making this holiday festive. I don’t go so far as setting leprechaun traps or anything like that but I can throw together a delicious and fun dinner like this St. Patrick’s day dinner board!

I also found out in the past year that I have Irish DNA on my dads side. So suddenly I feel a slight connections to my Irish heritage. I need to dig into my family history and see where it comes from. Maybe someday I will do a DNA test and see what percentage came through to me. For now, I will just enjoy the food and have fun with the holiday.

This year I upped my corned beef and cabbage game to include some really delicious spins on the classics! I made a giant dinner board for the whole family! It includes smoked corned beef brisket, smashed garlic potatoes, honey sriracha carrots, sesame Brussels sprouts and a fun fruity shamrock shake. This dinner isn’t too labor intensive either. The majority of the time it takes is spend on cooking time and not hands on.
