Strawberry Yogurt Cake

I have been making this strawberry yogurt cake for the past 13 years and it never disappoints! My sister first introduced me to it and through the years I have created my own recipes of how I like to make it. I have brought this cake to many get togethers, potlucks, birthday parties and baby showers and everyone always wants the recipe. It’s also many of my families very favorite cake!

It’s the perfect Easter or spring cake because it’s so bright, fresh and delicious! The cake it moist and has the best texture and the frosting is fluffy and fresh!. The strawberry flavors are dreamy in this cake.

I like to use Yo-plait yogurt in this cake because of the smooth constancy and intensity of their flavor but I have also used other brands to make it and they work too. The cake pictured below was made using Walmart brand strawberry yogurt. It does have little chunks of strawberry in it that are not there if you use other brands. Just make sure you use regular yogurt and not Greek yogurt. I have tried the cake with Greek yogurt and the results are not as tasty.

Serve this cake cold. Trust me on this one, this cake when served cold amplifies all the flavors and it’s honestly a little addicting!

What you need to make this strawberry yogurt cake:

makes 1 -9 x 13 cake

  • 1 white cake mix
  • 2 and 1/2 cups strawberry yogurt – yo-plait works the best but any brand non-Greek yogurt will work
  • 1/4 cup milk or water
  • 3 eggs
  • 1/4 cup oil

For the Frosting and topping:

  • 8 ounce container of cool whip – thawed
  • 1 cup strawberry yogurt
  • 2 cups chopped strawberries

Instructions:

  1. Pre-heat oven o 350 F.
  2. In a large bowl, add cake mix, strawberry yogurt, milk or water, eggs and oil.
  3. Whisk together until smooth.
  4. Bake for 30-35 minutes or until middle of cake is risen and toothpick comes out clean. (or at least the toothpick has no wet sticky batter on it, the crumb of the cake is slightly sticky)
  5. Cool cake completely before frosting and topping.
  6. To make the strawberry cream frosting, add the cool whip and strawberry yogurt together and gently fold until smooth.
  7. Top the cooled cake with the frosting mixture, followed by fresh diced strawberries.
  8. Enjoy!
