I love crackers but when I am watching my blood sugar levels I can’t eat as many of them as I want to. So I made this almond flour crackers recipes so I could freely indulge and I am so happy I did! This recipe is easy and super delicious!

What you need to make almond flour crackers:

Makes 6 servings

  • 1 cup almond flour
  • 1/2 cup whole wheat flour
  • 1/3 cup Parmesan
  • 1/2 teaspoon garlic powder
  • 3/4 teaspoon salt
  • 4 tablespoon butter – cold butter – diced
  • 3 tablespoons cold water

Instructions

  1. Preheat oven to 400 F.
  2. In a bowl mix almond flour, whole wheat flour, Parmesan cheese, garlic powder and salt.
  3. Add cold butter and cut it into the flour, until it’s a little smaller than pea size.
  4. Add cold water a tablespoon at a time and mix, until dough forms a dough ball.
  5. Place dough between 2 pieces of parchment paper and roll out into a large rectangle to desired thinness.
  6. Bake for 15 minutes, if you went really thin, check at 10 minutes.
  7. When crackers first come out of the oven, cut them into squares with a pizza cutter.
  8. Let them coll and enjoy!

Here is what the dough looks like before you roll it out.

Place between two sheets of parchment paper and roll out to desire thinness. Remember the thinner you go the shorter the cook time and the more fragile the cracker.

Place on a cookie sheet and bake for 10-15 minutes.

When the crackers get out of the oven is the best time to cut them. Do it fast before they start to firm up or you will end up with some broken crackers.

Finished crackers! enjoy! store in a zip lock bag or Tupperware container for freshness.
