Southwest Chicken Salad Sandwiches

These southwest chicken salad sandwiches are super delicious! Savory, slightly sweet and a tiny kick of heat that really wakes up all the other spices and flavors! Plus, they are really quick to pull together! I love using rotisserie chicken breast and freeze dried jalapenos and red onions to make these super fast! You can use fresh jalapeno and red onion too and it will taste amazing!

These are the perfect summer food! They taste light and fresh and transport easily for a picnic, lunch or dinner outside!

I love the textures in this southwest chicken salad sandwich, perfectly crunchy with bits of sweet, tangy and chewy craisins. The creaminess from the mayo compliments the spices used in this recipe too!

You can eat this salad on a croissant, bread, bun or use it in a lettuce wrap if you are going for a low carb approach. You could also put this over a salad or on it’s own.

What you need to make southwest chicken salad sandwiches:

Serves 2-3 people

  • 1 cup chicken – cooked and chopped, I love using rotisserie chicken breast
  • 1/4 cup celery – diced
  • 1 tablespoon jalapeno or 1 teaspoon freeze dried jalapeno – diced
  • 1 tablespoon red onion or 1 teaspoon freeze dried red onion – diced
  • 2 tablespoon mayonnaise
  • 1 tablespoon dried cranberries
  • 1 teaspoon sugar
  • 1 teaspoon vinegar
  • 1/8 teaspoon chili powder
  • sprinkle of garlic powder
  • pinch of salt
  • 2-3 croissants or bread for 2-3 sandwiches

Instructions

  1. Add diced chicken, celery, jalapeno, red onion, mayonnaise, cranberries, sugar, vinegar, chili powder, garlic powder and salt to bowl and mix well.
  2. Spoon onto cut croissant or bread.
  3. Enjoy!
