Copycat Clif Kid Z Chocolate Brownie Bars

My kids love these copycat clif kid z chocolate brownie bars. They taste just like the ones you can buy in the store but cost much less to make at home. They are super easy to make too and if your family loves the store bought ones they will love these ones. My kids actually love them better than the store bought ones.

Some of the ingredients may cost more up front if you don’t already have them in your pantry. Like molasses (around $3 a jar) coconut oil ($4-$5 a jar) honey ($2 for a small bottle) and figs (~$4 for a bag) but if you plan on making these regularly they are worth the investment of the ingredients because these ingredients will make this recipe several times over.

The figs are probably the most exotic ingredient in this recipe but can be found at most grocery stores with a natural section in the dried fruit section. I buy mine at Costco in a giant bag. Dates are perhaps more readily available and can be used in place of the figs.

What you need to make these copycat clif kid z chocolate brownie bars:

Instructions

  1. Preheat oven to 350 F.
  2. In a blender, food processor or a bowl that you can use an immersion blender in, add 1 cup old fashion oats, dried figs or dates, cacao powder, molasses, honey, sugar, salt, vanilla, coconut oil, baking soda, chocolate chips and water.
  3. Blend on high, stopping and stirring and pulsing until the mixture is smooth.
  4. Add the final 1 cup of old fashion oats and blend until smooth or to have slightly more textured bars briefly stir the mixture so the oats retain some texture.
  5. Empty batter onto a parchment paper lined or greased cookie sheet.
  6. Spread into a large rectangle about 1/3 to 1/2 inch thick. Note the batter will not fill the entire cookie sheet.
  7. Bake for 10-13 minutes or until tops are no longer sticky.
  8. Remove from oven and allow to cool before slicing. The pieces can be slightly molded too so you can round out the edges of the bars if desired.
  9. In a microwave safe bowl, add chocolate chips and melt in microwave for 30 seconds, stir and an additional 30 seconds if needed to melt the chocolate chips.
  10. Place in a zip lock bag, snip the end off and make a zigzag across the tops of cooled bars, freeze for 15 minutes to get chocolate to set.
  11. I store mine in a zip lock bag in the door of my refrigerator so my kids can grab them when wanted.
