Red Lentil Tacos

These red lentil tacos are super easy and fast to make and taste delicious! Lentils are filled with protein, fiber and other nutrients that are great for you. These tacos are vegan but anyone will enjoy them.

I have received some pink corn tortillas in the mail from a tortilla company when I was taking pictures of these lentil tacos. I thought they were so cute and they were pink to bring awareness to the fight against breast cancer. Any corn or flour tortilla will work great with these tacos. I like to toast mine up quickly on the griddle so they are nice and warm.

I love to top my tacos with my Fresh Pico De Gallo (RECIPE HERE), salsa, avocado and cilantro but any toppings would be great on these. Cashew cream, jalapenos, shredded cabbage or lettuce would really take these over the top in a good way.

What you need to make red lentil tacos:

Serves 4

  • 1 1/2 cups lentils – cooked, split or whole lentils
  • 1/4 cup onion – diced
  • 1/4 cup green chilies
  • 1/4 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/8 teaspoon cumin
  • 1 teaspoon onion powder
  • 1/2 teaspoon garlic powder

Instructions

  1. Cook lentils and set aside.
  2. In a pan, add onions and saute until they start to soften.
  3. Add green chilies, chili powder, salt, cumin, onion powder and garlic powder and cooked lentils and stir until all ingredients are combined and warmed through.
  4. Serve over your favorite tortillas with your favorite taco toppings.
