Fresh Pico De Gallo

Fresh pico de gallo with some crispy tortilla chips is one of the ultimate snacking foods in my opinion. I could dig into it and stay a while, any time of day! It also adds so much flavor to anything it’s added to! This recipe is super easy to make! Keep in mind, the longer these ingredients fiesta together in the fridge the better this fresh salsa gets, usually a day in the refrigerator does wonders!

I use garlic powder in this recipe if I am making it the day of or a day before, I have found that the flavors blend quicker if I use that. However, I do love fresh garlic in this too so I like to add it when I have a day or two for the pico to marinate together. This way the garlic has time to mellow out and blend with the other flavors better.

I love this recipe on tacos, enchiladas, stuffed bell peppers, burritos, eggs and more so it’s super versatile and it will last in your refrigerator for at least a week, I have found it’s still good even 2-3 weeks too if stored in a proper container.

To make you will need to make fresh pico de gallo:

Makes ~3 cups

  • 2 cups chopped tomatoes
  • 1/2 cup finely diced onion
  • 1/2 cup bell peppers – chopped
  • 1/4 cup cilantro – chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon sugar
  • 1 tablespoon lime juice or white vinegar
  • 1/8 teaspoon garlic powder or 1 clove fresh garlic – minced
  • Optional: 1/2 jalapeno or more for extra spice, finely diced, seeds removed for mild or seeds left in for spicy.

Instructions

  1. Dice all ingredients and mix everything together.
  2. When time allows, let mixture sit in the refrigerator for a day or two before eating for full flavor to develop.
