Grilled Plum and Pork Tenderloin Salad

This grilled plum and pork tenderloin salad is delicious, with sweet, sour, salty and savory notes going on throughout it. I love how grilling the plums brings out a caramelized, jammy flavor to them.

When grilling your plums be sure to only leave them on the grill for a few minutes or they will fall through and get too soft. You still want that firmness from the fruit.

I have a plum tree in my backyard that my grandma planted around 30 years ago and I absolutely love it when they ripen in August every year! I make all kinds of delicious creations with the fruit and we honestly just love to eat them plain too. The sour skin and juicy sweet flesh is do yummy! When you cook a plum it takes on a deeper, jammy and almost savory taste to it so it’s perfect for savory dishes.

What you need to make grilled plum and pork tenderloin salad:

Serves 2 as a main course or 4 as a side dish

Instructions

  1. Make the plum vinaigrette and chill.
  2. Grill the pork tenderloin then slice.
  3. Gently grill plums, don’t over cook or they will fall between the grill racks.
  4. In individual bowls, add spring mix, sliced pork tenderloin, grilled plums, feta and sunflower seeds.
  5. Add plum vinaigrette and enjoy!

  • 4 plums – cut in half pits removed
  • 6 handfuls spring mix
  • 1/4 cup feta – crumbled
  • 1/4 cup sunflower seeds
  • Plum vinaigrette – recipe for that is here
