Grilled Mexican Pork Chops

These grilled Mexican pork chops are a favorite of my kids. They are seasoned with a delicious Mexican inspired spice blend and cooked to be juicy and delicious.

You can use a bone-in or boneless pork chops for this recipe but I would aim for a thicker cut of pork so it retains the moisture more. The trick to a tasty pork dish is to not over cook it, as simple and obvious as that sounds, pork is notorious for being over cooked. I hear from others that they don’t like pork for this reason all the time.

This is majorly due to the fact that pork used to have a higher cook temperature recommended by the FDA to avoid food borne illness. Now the recommended temperature is 145 F. for a rare cook. I personally like a medium cook on pork and that temperature ends up being right around 150 F. internal temperature.

  1. Preheat grill to 400 F.
  2. Season pork chops with a good sprinkle of salt and pepper per side of the chop.
  3. Sprinkle over the chili powder, garlic powder and ground cumin over chops as well.
  4. Grill until chops are between 150 F. (medium) to 160 F. for well done.

  • ~2 pounds pork chops – bone in or boneless
  • salt and pepper – sprinkle on each side of chops
  • 1/2 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1/2 teaspoon ground cumin
