Swedish Pancakes

This recipe for Swedish Pancakes is inspired by the recipe of my great great Grandma Ruby. If you have never had Swedish pancakes, they are like a hybrid of a German pancake and a crepe. They are fluffier than a crepe but thinner than a German pancake.

Swedish pancakes taste buttery and delicious and are perfect stuffed or lightly dusted with powdered sugar.

My great great grandmother Ruby’s mother was named Maria Augusta and she was born and raised in Sweden before immigrating to the United States. She learned and passed down many Swedish recipes to my generation.

My great great grandma Ruby had 3 daughter’s. They each passed down their recipes in a cookbook called “We sisters three” that was compiled by my relatives. I love it so much and it is so fun to try and read their recipes. Takes me right back in time.

This Swedish pancake recipe is my adaption to her recipe. I have added melted butter to this recipe as well as just a touch more sugar. They are tender and delicious and I love them!

They are great with syrup, powdered sugar, berries, or lingonberry syrup like I have pictured in this recipe post.

Serves 4-6

Instructions

  1. Add the eggs, sugar, milk, flour, baking powder, salt and melted butter together and blend well in a bowl or blender.
  2. Pour the pancake batter into a greased non-stick pan so that it forms a thin layered pancake.
  3. When pancake is set enough on one side, then flip over and continue baking on the other side until it is cooked through.
  4. Serve with butter, powder sugar, syrup or whatever toppings you desire.

Swedish Pancakes

This is my great great grandma Ruby's Swedish pancake recipe, it's like a mix between a German pancake and a crepe and it's delicious!

Ingredients

  • 3 eggs
  • 1 1/2 tablespoon sugar
  • 2 cups milk
  • 2 cups flour
  • 2 teaspoon baking powder
  • 1/2 teaspoons salt
  • 1/4 cup butter melted

Instructions

  • Add the eggs, sugar, milk, flour, baking powder, salt and melted butter together and blend well in a bowl or blender.
  • Pour pancake batter into a greased non-stick pan, pour into a thin layered pancake then when pancake is set enough on one side, flip over and continue baking on the other side.
  • Serve with butter, powder sugar, syrup or whatever toppings you desire.
