Smoked Salmon Southwest Salad

This smoked salmon southwest salad is full of flavor and yummy textures. It has smoked salmon, pepitas, crispy jalapenos, feta, green onions, cilantro, corn and tomatoes, The dressing is a cilantro vinaigrette.

I love to use the honey smoked salmon from Costco, it has more of a baked salmon feel to it than traditional smoked salmon. Any type of salmon will work for this recipe.

The dressing is simple a simple cilantro vinaigrette that is a little sweet and savory. It comes together really quickly and adds the perfect flavor to the salad.

What you need to make this smoked salmon southwest salad: (printable recipe card is below)

Serves 2 as a main entrée

  • 4 handfuls lettuce – chopped
  • 1 cup corn
  • 1/2 cup cilantro
  • 1/2 cup feta crumbled
  • 1/2 cup tomatoes
  • 1 green onion – diced
  • 3 tablespoons crispy jalapenos
  • 2 tablespoons pepitas
  • 3/4 cup smoked salmon

For the cilantro vinaigrette:

  • 1 cup cilantro
  • 2 cloves garlic
  • 1 tablespoon mustard
  • 1 1/2 teaspoons sugar
  • 1 teaspoon salt
  • 1/4 cup oil
  • 1/4 cup white vinegar

Instructions

  1. Add all of the salad ingredients into a serving dish.
  2. To make the dressing, add all of the ingredients into a blender and or food processor and blend together until smooth, If you don’t have a blender, you can finely mince the cilantro and garlic and whisk dressing together.
  3. Dress with desired amount of dressing and enjoy!
