Steak and Vegetable Skewers

These steak and vegetable skewers are a classic staple of summer grilling at my house. They have a flavorful marinated steak piece with grilled vegetables that I absolutely love!

The marinade is simple but gives these a great flavor that absorbs into the meat as it sits in the fridge for a few hours. Then the sugars in the marinade help to caramelized the steak when it is cooked, making for a delicious flavor!

The vegetables I have listed can be switched out for your favorite vegetables or ones you have on hand.

I like to thread my vegetables on a different skewer than my meat so that I can serve them separately for my family, however, you can thread them in whatever order you prefer. There are flavor benefits from threading the vegetables between the steak but it is up to you.

What you need to make these steak and vegetable skewers: (printable recipe card is below)

Serves 6

  • 2 pounds London broil – cut into bite size pieces
  • 1/4 cup Worcestershire sauce
  • 1 tablespoon Dijon mustard
  • 1/4 cup soy sauce
  • 2 tablespoon sugar
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon garlic powder

For vegetables:

  • Red onions
  • zucchini
  • Bell peppers
  • Mushrooms
  • Eggplant – Optional
  • Olive oil for vegetables
  • Salt and pepper for vegetables

Instructions

  1. In a large container or zip lock bag, add the steak, Worcestershire sauce, Dijon mustard, soy sauce, sugar, salt, black pepper and garlic powder, mix around until the steak is well coated and then refrigerate for at least 30 minutes, preferably a few hours.
  2. Toss vegetables in a little olive oil and season with salt and pepper.
  3. Skewer steak either on it’s own or with vegetables in between.
  4. Grill on 400 F. until steak and vegetables are at desired cook.
  5. Enjoy!
