Chicken Caesar Salad Nourish Bowl

This Chicken Caesar Salad Nourish Bowl is my current foodie obsession! It’s delicious, nutritious and easy to throw together when you have a few of the ingredients prepped.

This bowl features a base of greens of choice, I love to use a hearty greens mix of shredded cabbage, kale and brussels sprouts, then it gets quinoa, roasted sweet potatoes, diced Italian chicken, croutons, bell peppers and tomatoes, parmesan cheese and Caesar salad dressing.

This recipe is great for a meal prep meal, since the sweet potatoes and quinoa take the longest to prepare, I would recommend making extra so you can have them for a few meals during the week. I know I don’t love spending more time than I need to for meal prep during my busy weeks, so I am always for prepping more ingredients all at once so I can easily throw meals together later in the week.

This is what you need to make this Chicken Caesar Salad Nourish Bowl: (Printable recipe card below)

Makes 1 bowl, serves 1

  • 1 cup favorite greens mix (I used a kale, cabbage and Brussels sprouts one)
  • 1/3 cup cooked quinoa
  • 1/2 cup cooked chicken, diced and seasoned with garlic and herb seasoning or Italian seasoning
  • 1/2 cup roasted sweet potatoes – seasoned with salt and pepper
  • 1/4 cup croutons
  • 1/4 cup bell peppers – diced
  • 1/4 cup tomatoes – grape, cherry or diced
  • Sprinkle of Parmesan cheese
  • Drizzle of Caesar salad dressing

Instructions

  1. Prepare your quinoa and sweet potatoes and set aside.
  2. To cook the chicken, sauté with olive oil and garlic and herb seasoning or Italian seasoning of choice.
  3. Assemble bowl by adding greens, quinoa, chicken, sweet potatoes, croutons, bell peppers and tomatoes and sprinkling the top with parmesan cheese.
  4. Drizzle the top with Caesar salad dressing.
  5. Mix together and enjoy!
