How to meal prep $10 worth of Chicken to make 6 meals that will serve a family of 6 – 2 adults and 4 kids

Believe it or not I too love to save time in the kitchen! Here is something I do on occasion to slash meal prep time and also cut costs! I buy a family pack of chicken breast and season according to the meals I have planned for that week! These can also be frozen to have on hand for the month or whenever you need them!

I open the pack of chicken and lay them all into a lightly greased 9 x 13 roasting pan. Preheat the oven to 375 F, Drizzle all of the chicken breast with olive oil. Sprinkle the tops with individual spices. Bake for 45 minutes or until chicken breasts are cooked through.

Save the Chicken breast by placing into individual zip top bags, keep refrigerated for up to 5 days or frozen for future meals.

Chicken Alfredo Chicken Breast

Season with:

Italian Herbs

Garlic Powder

Salt

Pepper

To make the meal

Boil pasta, use store bought Alfredo sauce or make a Alfredo sauce from scratch by adding 4 cloves crushed garlic along with 4 Tablespoons of Butter to pot, melt over medium heat, add 4 Tablespoons Flour to the butter and stir. When the mixture becomes slightly golden whisk in 2 cups of milk. Stir until the mixture thickens and add 1/2 cup Parmesan cheese. Stir until melted. Add 1/2 teaspoon salt, *more to taste. Top pasta with sauce, and diced chicken Alfredo chicken breast.

Chicken Noodle Soup Chicken Breast

Season with:

Garlic Powder

Italian Herbs

Onion Powder

Celery Salt

Salt

Pepper

Tikka Masala Chicken Breast

season with:

Garam Masala Seasoning – can be found in most grocers spice racks

Red Curry Powder

Garlic Powder

Salt

Chicken Tacos

season with:

Chili Powder (I love the six chili powder but any chili powder will do)

Cumin

Salt

Pepper

Dice this chicken breast up and serve with beans, tomatoes, cheese, guac, salsa or whatever you love on your tacos.

Stir Fry Bowl

Season with:

Shichimi Togarashi seasoning – Spice blend made up of nori (seaweed), dried orange peel, red pepper, sesame seeds, ginger, poppy seeds and white pepper. This blend may seem a bit intimidating but it can be found in most grocery store spice aisles or if you are feeling ambitious then use this recipe here to make your own.

To make the meal

Cook up some of your favorite stir fry vegetables, I love the frozen blends for convenience and cost. Make a sauce by bringing 3/4 cup chicken stock, 1 teaspoon ginger, 1 teaspoon garlic, 1/4 cup soy sauce, 2 tablespoon Honey, 1 Tablespoon sesame oil to a boil. quickly whisk in a corn starch slurry consisting of 1 Tablespoon cornstarch and 2 Tablespoons water. Dish up by adding rice, followed by vegetables, sliced chicken breast and sauce over the top.

Chicken Salad Sandwiches

*Depending on the size of your chicken breasts, you may need 2 chicken breast to feed 6, I was using these for me and my husbands lunch so 1 breast was sufficient for us.
