Chickpea Pasta

This chickpea pasta tastes great and it is also fairly quick and easy to make! Homemade pasta may seem a bit daunting but I promise you it is not too hard. My kids love helping me in the process!

What are the health perks of chickpea pasta?

Chickpea pasta contains about 17 total carbohydrates per serving and it is packed with protein, fiber, and vitamins. Traditional floured pasta contains around 40-45 total carbohydrates so If you are watching your carbohydrates in regards to managing your blood sugar, this recipe is a great alternative!

Even if you are not watching your carbs this pasta is still a healthy option. Did I also mention that it tastes delicious and you really can’t tell the difference between traditional pasta and this! It also costs pennies to make your own chickpea pasta.

How did I come to create this recipe?

This recipe was developed by happy accident! One day, me and my daughter were trying to find this baking store that I had never been to before. It supposedly had a great deal on real vanilla extract. I put the name of the store into my phones GPS and was lead not to that baking store but to an authentic Indian food market.

I was so intrigued and decided to skip finding the magical vanilla deal and went into the market. I am so glad we did! I am a huge Indian food fan! I was amazed by all of the different types of flours they had! Different bean flours, rice flours, grain flours, etc.!

They all had Indian names so I wasn’t sure until I flipped the packages over and saw the very small English section that said what it was. I picked up a bag of Besan and to my delight I found the words ground chickpeas. I was so excited! I grabbed a big bag, along with some other spices and goodies and headed home to experiment! Originally I wanted to make a chickpea wrap recipe but that recipe evolved into my chickpea pasta.

A few things to keep in mind.

When you first mix up the dough it has a strong bean smell, don’t worry that completely fades when you cook the pasta and I cannot taste bean when I make it and neither can my kids.

 

Chickpea pasta rolls out just like traditional pasta does so it is easy to work with, you can use a rolling pin, a pasta press or a pasta machine for it.

What you will need to make this chickpea pasta:

  1. Add the chickpea flour, eggs, salt and olive oil to a bowl and mix until a pasta dough forms.
  2. To roll out this dough you will need two sheets of parchment or non stick paper or films. Dust the surface of the first sheet with chickpea flour and dump the dough onto the floured surface.
  3. Dust the top of the dough with flour and place the other piece of parchment on top. Press the dough down with your hands so it is fairly flat.
  4. Next, Use your rolling pin to roll the dough out under the parchment paper. If the dough looks like it’s sticking, remove the parchment paper on top and dust with more chickpea flour. If the bottom is sticking then flip the dough over so the top sheet of parchment becomes the bottom and remove the parchment and dust with more flour.
  5. Roll dough as thin as you can get it.
  6. If you are NOT using a pasta roller, cut dough into 4 sections and roll each piece out as thinly as you can. with a knife or cutter, slice dough into desire pasta shapes, for linguine, spaghetti, ravioli, tortellini, lasagna, or any other desired shape.
  7. If you are using a pasta roller. Cut the dough into 4 sections and roll through your pasta maker at a level 4. you may be able to roll it thinner but that is the thickness I like to roll the dough to. If you have a linguine cutter you can roll the dough through that or hand cutting the dough is great too. You can also make ravioli, tortellini, lasagna or whatever pasta you want to make.
  8. In a pot with slightly salted water, boil pasta for 2-3 minutes or until it floats to the top and looks done. Drain, eat and enjoy!
