Healthier Chocolate Chip Cookies

I have been making chocolate chip cookies since I was a kid. I started seriously making them while dating my husband because I wanted to win him over. Ha ha. After marriage they have become a love language of sorts from me to my husband. So I have a high standard when it comes to chocolate chip cookies! I am happy to say that these healthier chocolate chip cookies are super delicious and totally pass both my standard and more importantly my husband’s!

They are made with almond flour and coconut sugar. The almond flour lowers the carbohydrates in the recipe and the coconut sugar lowers the glycemic index of these cookies. Coconut sugar has inulin fiber in it, which is a type of fiber that slows the absorption of the sugars in the coconut sugar. So it won’t spike your blood sugar like refined white sugar does.

What you need to make healthier chocolate chip cookies:

makes 18 cookies
  • 1 cup almond flour
  • 1/2 cup flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 2/3 cup coconut sugar
  • 1 teaspoon molasses
  • 1/2 cup butter – softened
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1/2 cup chocolate chips

Instructions

  1. Preheat oven to 375 F.
  2. In a bowl combine almond flour, flour, salt, baking soda and coconut sugar.
  3. Stir until smooth.
  4. Add molasses, butter, egg and vanilla.
  5. Combine butter mixture and flour mixture together until a smooth dough forms.
  6. Stir chocolate chips into the dough.
  7. Spoon out 1 tablespoon balls onto a parchment paper lined cookie sheet.
  8. Bake for 8-10 minutes.
  9. Let cool on cookie sheet.

I have made these twice now. I added oat flour instead of the 1/2 cup of white flour. I added raisins and nuts also. In my oven, I only need to bake them for 5-6 minutes. Maybe it depends on the altitude. I live in the high desert of California which is 1,929 ft. Thank you for a healthier recipe of chocolate chip cookies. These are very easy and fast to make and turn out so good.
