Nectarine and Mascarpone Tart

This nectarine and mascarpone tart tastes delicious! The tart crust tastes like a traditional tart shell and a sugar cookie combined. The mascarpone is creamy, sweet, fluffy and delicious and the nectarine is tossed in lemon juice and sugar so it provides the perfect acid to cut through the mascarpone’s fat. It looks and sounds like a fancy dessert but it’s secretly super easy and quick to make!

If you have never had mascarpone cheese, it tastes like heavy cream with the texture of cream cheese. It isn’t tangy like cream cheese but if you don’t have mascarpone cheese on hand you can mix cream cheese and heavy whipping cream together to mimic the flavors. Most stores do sell mascarpone cheese by the other soft cheeses.

What you need to make nectarine and mascarpone tart:

makes 1 – 7-8 inch tart

For the tart crust:

  • 1/2 cup almond flour
  • 1/2 cup flour
  • 1/4 cup sugar
  • 1/2 teaspoons salt
  • 4 tablespoons butter
  • 2 tablespoons cold water

For the mascarpone cream:

  • 4 ounces mascarpone cheese
  • 1/4 cup sweetened condensed milk
  • 1 tablespoon lemon juice

For the nectarines:

  • 2 nectarines
  • 1 tablespoon sugar
  • 1 teaspoon lemon juice

Instructions for tart shell:

  1. Pre-heat oven to 425 F.
  2. In a mixing bowl, combine almond flour, flour, sugar and salt together.
  3. Add cold butter that is cut into medium chunks.
  4. Mix butter into the flour mixture.
  5. Add cold water to the flour and butter mixture and mix together until a dough forms.
  6. On a parchment paper lined cookie sheet, roll out the dough into a round circle.
  7. Fold up the edges and crimp with your fingers.
  8. Bake for 15 minutes.
  9. Cool tart shell.

Instructions for mascarpone cheese mixture:

  • In a small bowl, combine cheese, sweetened condensed milk and lemon juice until mixture is smooth.
  • Spread over cooled tart shell.

Instructions for nectarines:

  • Slice nectarines into thin slices.
  • Add lemon juice and sugar to slices and toss.
  • Lay on top of mascarpone cheese mixture.
  • Add any leftover juice in the bowl to the top of tart.
