One Pot Meatball Beef Stroganoff

This one pot meatball beef stroganoff is super easy to make and tastes delicious! It’s filled with all the classic beef stroganoff flavors but uses frozen meatballs for the beef and only takes one pot to make. The frozen meatballs make it super simple to put together because you just add them to the pot while they are frozen along with the sauce ingredients and dried noodles and simmer until the noodles, sauce and meatballs are done. This dish is really easy and also packs a lot of flavor!

I grew up with beef stroganoff as a staple meal my mom would make. It was always one of my favorite meals, though I hated mushrooms as a girl and I don’t remember my mom putting them in….unless…. she was sneaking them in the whole time! Which if she did that, then she got away with it for 33 years! She’s good ya’ll! Ha! Now I love mushrooms and love to add a bunch to this recipe. They add a beautiful earthiness and depth of flavor to this dish. If you don’t love mushrooms or have family that doesn’t like them, you can leave them out or be sneaky like my mom and mince them up super small.

My husband told me a mushroom joked today, he said “I used to hate mushrooms when I was younger but now I think they are growing on me, literally I can’t get them off” ha ha! I love a good dad joke!

What you need to make one pot meatball beef stroganoff:

Serves 4

  • 1 tablespoons olive oil
  • 1 yellow or white onion – diced
  • 8 ounces baby Bella or white sliced mushrooms
  • 1/2 teaspoon salt
  • 1/4 teaspoons black pepper – if you like black pepper increase to 1/2 teaspoon
  • 1/8 teaspoon ground sage – optional
  • 2 bay leaves – optional
  • 4 cups beef stock
  • 3 cups frozen meatballs
  • 1/3 cups sour cream
  • 2 tablespoons whipping cream or milk
  • 1 teaspoon Worcestershire sauce
  • 4 1/2 cups dry extra wide egg noodles – about 8 ounces or 1/2 pound
  • 1 1/2 tablespoons cornstarch
  • 1 1/2 tablespoon water

Instructions

  1. In a large pot, add olive oil, diced onion, sliced mushrooms, salt, black pepper, sage and stir over medium heat until onions start to soften.
  2. Add bay leaves, beef stock, frozen meatball, sour cream, cream or milk, Worcestershire sauce, dry egg noodles and stir together.
  3. Simmer for 7-9 minutes or according to noodle package instructions.
  4. Whisk together cornstarch and water in a bowl then quickly stir into mixture and boil and stir until it thickens slightly.
  5. Remove from heat, remove bay leaves and enjoy!
