Instant Pot Paprika Stuffed Peppers

These instant pot paprika stuffed peppers are stuffed peppers with ground beef or ground pork, rice, paprika and other seasonings. They are served with the stuffed pepper and filling being the center and a rich and delicious broth served along side them.

These are quick and easy to make and there is no need to cook the filling before hand, instead you can add the uncooked meat, uncooked rice and seasonings mixture into a raw pepper and then fill up the instant pot with a broth and then cook. The rice will soak up a lot of the liquid but also leave a broth to serve with the stuffed pepper.

The paprika in these peppers can be traditional paprika, sweet or smoked. The smoked paprika gives these an almost Spanish feel while sweet paprika gives a Balkan feel to these. Whatever type of paprika you use it will taste delicious.

What you need to make this instant pot paprika stuffed peppers:

Serves 6

  • 6 bell peppers – any color, tops cut off and cores removed
  • 2 cups dry rice
  • 1 pound ground beef or ground pork
  • 2 cups beef stock
  • 14 ounces chopped tomatoes
  • 1 small onion – diced
  • 1/2 teaspoons salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon onion powder
  • 1/2 teaspoon garlic powder
  • 1 tablespoon paprika – regular, sweet or smoked

For cooking broth:

  • 6 cups beef stock
  • 1 teaspoons paprika – regular, sweet or smoked

Instructions

  1. Remove the tops and cores of the bell peppers.
  2. In a large bowl, combine, dry rice, ground beef, beef stock, chopped tomatoes, diced onion, salt, black pepper, onion powder, garlic powder and paprika.
  3. Mix everything in the bowl together so it’s well combined.
  4. Place mixture into each bell pepper then place the bell peppers into the instant pot.
  5. Add the beef stock and paprika into the instant pot too, pouring the liquid into and over each of the stuffed bell peppers.
  6. Cook on high pressure for 20 minutes with a quick pressure release.
  7. Remove lid, spoon out bell peppers and serve with broth. Note that If filling gets boiled out during the cooking process (this can happen) then spoon filling and broken pepper into a bowl with liquid and serve.
