Poor Girls Lobster Rolls

These poor girls lobster rolls are the perfect way to fake out the real lobster rolls for way less money! You and your wallet will love these! I’m always down to eat good food on the cheap and these are the perfect swap to make for this delicious summer time staple!

I use imitation crab for these and it makes is affordable, easy and delicious!

All you have to do is chop the ingredients and add everything to a bowl and mix it together then spoon it onto a hoagie bun and you have it. It’s summery and flavor packed!

I love to use lemon zest in this recipe because it gives it that extra little burst of brightness but that ingredient is optional. You can just use the lemon juice and no zest if you don’t have a fresh lemon on hand.

The bun can be left untoasted or toasted and buttered for a traditional lobster roll that you will feel like you are eating on a road side stand. I love it both ways!

Ingredients

  • 1 stalk celery finely diced
  • zest of 1/2 lemon optional
  • 8 ounces imitation crab chopped
  • 2 tablespoons chives or 1 tablespoon freeze dried chives minced
  • 3 tablespoons mayonnaise
  • ~1 tablespoon lemon juice
  • dash of black pepper
  • 1/2 teaspoon dried dill
  • dash of cayenne
  • 1/2 teaspoon old bay seasoning
  • 2 hoagie buns toasted and buttered or left un-toasted depending on preference
