Strawberry Goat Cheese Kale Salad

This strawberry goat cheese kale salad is full of yummy flavors, bursting with freshness, and it’s super easy to make. It features a bed of massaged kale (for tenderness), juicy strawberries, creamy goat cheese, slivered almonds and an easy sweet and tangy balsamic dressing.

Spring is in the air and this recipe is perfect for this time of year. Great to serve at a St. Patrick’s day party, Easter dinner, Mothers Day brunch, a picnic or really, any day of the week!

If you have been to my website before or follow me on social media, you know that I love salads! Salads are never boring to me. They have to have great textures and popping flavors for me to be a fan and this salad has both of these. So, this salad has joined the ranks along side of some of my other favorite salads here on my website.

To message the kale, you will add a little oil and salt to the kale and massage it with your hands, This helps tenderize the leaves and make it easier to eat. When you add the goat cheese you will also message it into the kale and this also helps soften the kale.

What you need to make this strawberry goat cheese kale salad:

Serves 4 (as a side salad)

  • 2 handfuls chopped kale
  • 1 teaspoon grapeseed or flavor neutral oil
  • sprinkle of salt
  • 3 tablespoons goat cheese
  • 4 strawberries – diced
  • 3 tablespoons slivered almonds – toasted for extra crunch and flavor

For the dressing:

  • 1 tablespoon balsamic vinegar
  • 1 teaspoon Dijon mustard
  • 1 tablespoon grapeseed or flavor neutral oil
  • 1 tablespoon sugar
  • pinch of salt

Instructions

  1. In a medium to large serving bowl, add the chopped kale, oil and salt.
  2. Use your hands to message the oil onto the kale leaves, this will really soften them and make them easier to chew and eat.
  3. Add the goat cheese and message it into the leaves as well.
  4. Add the diced strawberries and slivered almonds and mix until combined.
  5. In a small bowl, add the dressing ingredients and whisk together until the sugar dissolves.
  6. Pour dressing over the salad and mix.
  7. Serve and enjoy!

*Pro tip: add grilled steak or chicken to this salad for a delicious main course.
