Mexican Zucchini Lasagna

Mexican Zucchini Lasagna

Mexican Zucchini Lasagna is healthy and delicious! Packed with veggie goodness and protein! It is low carbohydrate and bursting with flavor!

 

What you need

1 pound ground beef – cooked

1 -15 ounce can tomatoes with jalapeno

1 – 15 ounce can corn

1 – 15 ounce can black beans

1 cup cottage cheese

2 tablespoons taco seasoning

1/4 cup salsa

3 medium zucchini – sliced into 1/4 inch slices

6 corn tortillas

1 cup salsa

1 cup Mexican blend cheese

Optional Garnishes for the top:

Sour Cream

Salsa

Green Onions

Black Olives

Instructions

Preheat oven to 350 F.

Mix the ground beef, tomatoes, corn, black beans, cottage cheese, taco seasoning and salsa together in a large bowl.

Spread a thin layer of the meat mixture in bottom of a 9 x 13 pan.

Next, layer zucchini slices on top.

Followed by another layer of meat mixture.

Followed by a layer of corn tortillas, ripped to fit the pan.

Next, add another layer of meat mixture then another layer of zucchini,

Spread 1 cup salsa on top and Mexican blend cheese.

Bake for 35 minutes.

Topped with sour cream, salsa, green onions and black olives.
