Zucchini Lo Mein

I love this zucchini lo mein! It’s packed with flavor and the lo mein noodles are actually spiralized zucchini! The zucchini does a great job of canvasing all the amazing flavors in this dish and I love the texture it takes on when it’s cooked.

My family loves this recipe too and it’s a great way to pack a whole bunch of vegetables into a single dish. I use chicken in this recipe but if you wanted to switch it out with any other protein or leave it out of the recipe all together that would be fine too. It would taste great with tofu, tempeh, pork, beef or seafood.

Instructions

  1. Spiralize zucchini and set aside.
  2. Slice the onions, peppers, mince your garlic and chunk up your chicken breast or protein of choice.
  3. Add sesame oil to pan and heat to medium high heat.
  4. Add chicken, sliced onions, bell pepper and garlic and sprinkle with salt, garlic powder and ground ginger.
  5. Saute until chicken is cooked through and onions and peppers are softened.
  6. Add snow peas and zucchini and saute and stir for a few minutes.
  7. Add the soy sauce or liquid aminos and sweet chili sauce and stir until zucchini softens and everything is stirred well together.
  8. Remove from heat and enjoy.

  • 2 -3 medium zucchini – enough for about 6 cups raw zoodles or thinly sliced zucchini
  • 3 tablespoon sesame oil
  • 1 pound chicken breast – diced
  • 3 cloves garlic – minced
  • 1 small yellow onion – sliced
  • 1 large red bell pepper – sliced into thin strips
  • 1/2 teaspoon salt – plus more to taste
  • 1/4 teaspoon ground ginger
  • 1/2 teaspoon garlic powder
  • ~2 cups snow peas – I just grab two big handfuls
  • 4 tablespoons soy sauce or liquid aminos
  • 1 tablespoon sweet chili sauce
