Peanut Butter Banana Chocolate Chip Muffins

These peanut butter banana chocolate chip muffins are a big hit at our house! Seriously my kids gobbled these up! The peanut butter, banana and chocolate flavors make for a delicious muffin. They are a great way to use up ripe bananas and can be made ahead of time and frozen for quick and easy breakfasts or snacks later.

The secret to a good banana muffin is grated dark chocolate in the batter. The bitterness from the dark chocolate really highlights all the other flavors and gives the dough some depth of flavor.

You can sub out the peanut butter in this recipe with oil or butter if you don’t love peanut butter or have someone with an allergy.

What you need to make banana chocolate chip muffins:

makes 18 muffins

  • 2 large ripe bananas
  • 1/4 cup peanut butter can be subbed with 1/4 cup vegetable oil
  • 3 Eggs
  • 1/2 cup non-fat Greek yogurt
  • 1 tablespoon vanilla Extract
  • 3 tablespoons grated dark chocolate you can also use 2 tablespoons cocoa powder if you don’t have any dark chocolate on hand.
  • 1/2 tsp baking Soda
  • 1 tsp baking Powder
  • 1 tsp salt
  • 1/2 cup brown sugar
  • 1 cup flour or gluten free baking mix
  • 1/2 cup milk
  • 1/2 cup semi-sweet chocolate chips

Instructions

  1. Pre-heat oven to 350 F
  2. Mash bananas. brown sugar and peanut butter together,
  3. Add eggs, yogurt, and vanilla.
  4. In separate bowl mix flour, baking soda, baking powder, salt, grated dark chocolate and chocolate chips.
  5. Dump half of the flour mixture into the banana and egg mixture and mix, followed by half of the milk, mix, then remaining flour mixture, mix then milk. mix.
  6. Fill cupcake liners 2/3rd the way full.
  7. Bake for 15-17 minutes or until tops slightly spring back when touched or toothpick comes out clean.
